Just veggies, pasta sauce and chicken cutlet? Say less.

Literally just broccoli, orange pepper, red onion, celery, spices, with Classico pasta sauce, chicken cutlet that was just bake from frozen n’ go and grated parmigiano reggiano (yes, I bought the good cheese, y’all. Don’t judge me 😂).

Soooooo good and it’s filling. Just cooked the veggies in the oven with the chicken for 21 minutes, and then added the sauce to the veggies.

Quick & Easy Curried Mussels

Probably one of my favourite dinner ideas this year. Was racking my brain to figure out what I was having for dinner, since I came home super late from work, then remembered still had a pack of New Zealand Mussels in the freezer.

The best part about that pack is that I can just microwave it to cook it. 6 minutes in there while I got to work on the other ingredients. Prepped my veggies, separated the mussels from the shells, burnt my curry, added other spices and the result…

Something I like to make on this low-carb/no carb diet I am on. It’s filling and hits the spot when you want noodles but can’t have it.

Ever Watch “My Lovely Sam-Soon”?

Well there is this scene in MLSS where she is sitting at home mixing rice in a pot with stuff that was handy around the house.

I’ve been making mix-up rice ever since. The closest thing I can say it compares to is Poke. All you need is rice, tuna (sushi grade or canned), whatever vegetables you like (I prefer cucumber, red onion and green onion), Japanese rice seasoning (or if you are like my West Indian self, add Irie Seafood Seasoning, garlic powder and onion powder and the Japanese rice seasoning because a meal without spice is not a meal) sushi/sashimi sauce, a tiny bit of sushi mayo, tsp of pure sesame seed oil and Korean pepper paste.

I affectionately call it “Ghetto Poke” because it tastes like Poke without the fish roe.

While it may not look all that great to the eye, my stomach, and the stomach of those I’ve served it to have never once complained.
