Ok, it’s not official yet, but I think I have figured out a 30 calorie Tea Cake recipe… I haven’t actually baked it yet, just tested the numbers.
Yield: 15 tea cakes (30 cal/tea cake)
Ingredients
1/2 cup Splenda (0 cal)
1 tsp Vanilla Extract (12 cal)
1 Medium Egg
1/3 cup Unsweetened Applesauce (34 cal)
1 tsp Magic Baking Powder (0 cal [ side note: not all baking powders are 0 cal, check the label first ])
1 cup Bob’s Red Mill Graham Flour (408 cal [ side note: not all graham flour is this calorie count, get this specific brand or search for one close to this count ])
In a mixing bowl, cream butter and sugar. (Blend applesauce & sugar, actually.) Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine flour, baking powder and salt; gradually add to the creamed mixture (the dough will be soft). Drop by teaspoonfuls 2″ apart on to greased baking sheets. Bake at 375 °F (190 °C) for 7-8 minutes or until the edges are golden brown. Remove to wire racks to cool. Note: based on a recipe from All Recipes.
[ side note: I just realized that this could also be a vegan recipe, well if you find an egg substitute… go fig ]
[ side note, part 2: made it today (07/25/13) and you can substitute the egg by adding 1/2 cup applesauce and a tsp of water rather than the 1/3 cup. ]
